What are some simple vegetarian meals?!


Question: What are some simple vegetarian meals!?
A family member is coming down, and she wants me to try some of these meals with her, but I plan on having a dinner ready when she gets home, and I want to surprise her with meals she may enjoy and like, any ideas!?Www@FoodAQ@Com


Answers:
A good whole wheat pasta with capers, artichokes, and black olives with spices and olive oil is easy!. Just fix the pasta as directed, then add capers, and artichoke hearts (you can buy the marinated ones in seasoned olive oil to skip a step), sliced black olives - spices and olive oil if you didn't buy the marinated artichoke hearts and just add the oil they are in to the pasta!. Simple salad, bread, some fruit for dessert - a good meal!.

Something else that is easy to fix would be a Mexican approach!. Refried beans (misnomer as you don't have to fry them), Soft or hard shell taco shells, lettuce, tomato, maybe some cheese if you do dairy, onions, maybe some jalapenos, whatever you would like on a taco!. Some Mexican rice, maybe some mango for dessert to keep within theme!.

Meatless chili is always good with some cornbread!. How about a homemade pizza!? Homemade vegetable soup with some biscuits!. Vegetable kabob's!? Vegetable lasagna!?

It really is endless!. The key to figure it out is to not see what you can't fix, but what you can fix!. If you get stuck in the former, figure ways to make what you normally would make with meat and instead replace it with a meatless option - such as stuffed bell peppers stuffed with rice and veggies vs!. the usual meat for an example!.

pasta with a simple marinara sauce, a salad and garlic bread!.

Here is my usual go to recipe for the pasta sauce!. I made it for my husband's family for new years (and they are all heavy meat eaters)!. They absolutely loved it!

2 cans stewed tomatoes in Italian spices (I usually use about 1 can per person because I like lots of sauce!)

about half of an onion, chopped

minced garlic (however much you like, I use around 1 Tablespoon for 2 people)

spices: cayenne pepper, parika, white pepper, salt, black pepper, dried parsley, dried oregano, dried basil!. (just a dash of each of these, or however much you like)

A splash of red wine (optional)


Saute the onions and garlic for a few minutes until the garlic starts to get golden in color!. Add the tomatoes and cook over medium-high!. Stir in spices!. Add the wine and cook for about 10 minutes!.

The longer you cook the sauce, the richer the flavor will be, but in a pinch I can have this made in about 10-15 minutes!. Some days I let it sit on the stove for about an hour and let the flavors develop more, but it's totally up to you!. also, about 5 minutes before you serve the pasta, add some chopped fresh parsley and basil if you it--it makes this dish supper yummy!

I'm a college student so I have good, healthy, quick food ideas!.

-Make whole grain pasta with pesto sauce!. First I stir-fry tomatoes and garlic, then turn the heat down to put the sauce in to warm up!.

-Make a salad with sliced apples, goat cheese, sauteed onions, and walnuts!. I usually use balsamic vinaigrette dressing!.

-Toast a bagel and put hummus, lettuce, onion, tomato, broccoli, and fresh ground pepper on it!.

You can add and subtract what you like to these recipes also!. They're all also pretty filling!. Hope that helps!.Www@FoodAQ@Com

Pasta Con Broccoli

* 16 oz!. medium pasta shells
* 1 stick butter
* 32!. oz!. half & half
* 8 oz!. canned mushrooms, drained
* 16 oz!. fresh or frozen broccoli pieces
* 1 1/2 tsp!. garlic powder
* 4 oz!. can tomato sauce
* 1 1/2 to 2 cups Parmesan cheese

Method

Cook shells until partially done!. Drain noodles!. Return to pan!. Add half & half, butter, garlic powder, tomato sauce and broccoli!. Bring to a boil!. When shells are fully cooked, add mushrooms and gently stir!. Remove from heat and add cheese!. Stir and serve!.
