I don't know what size eggplant you have, so the following will have to be eyeballed, but it will give you a good base!. Make a basic dressing with bread crumbs, vegetable broth, carrots, onions, garlic, celery, and instead of sage season with parsley and italian seasoning!. Chop all veggies, and saute in a small amount of olive oil until translucent, about 5 minutes (excluding the garlic which gets bitter if overcooked!. Add it about 45 seconds before adding the bread)!. Add your bread crumbs, a bit of vegetable broth and a can of chopped italian style tomatos!. Meanwhile, Eggplant should be sliced lenghtwise and salted to remove excess moisture and any bitterness!. Drain on paper towels, and either sautee or steam until pliable!. Place a spoonful of the stuffing on the wide end of the eggplant, and roll, securing with a toothpick!. Place in a casserole and cover with your favorite marinara or spagheti sauce!. Bake at 350 degrees for 30-45 minutes, sprinkle with a small amount of either parmsean or romano cheese and enjoy!Www@FoodAQ@Com
I make one similar to Sophia, but use TVP as a filler, I do the same for peppers and lasagna, it is low in cholesterol, cheese is an option if you do not want dairy one, I have found soya cheese does fine!.
