Question: Transitioning to vegan lifestyle but son luvs Mac n Cheese!?
I would like to make a dish that tastes kind of like mac n' cheese!. Anyone have any recipes!?Www@FoodAQ@Com

Cheese dishes can be tricky because faux cheese does not taste similar to real cheese at all!. So people either love faux mac and cheese dishes or they hate them!. This recipe is the tastiest vegan mac and cheese recipe that I have found: http://vegweb!.com/index!.php!?topic=21733!.!.!.!.

If your son doesn't like that one, there are tons of other vegan mac and cheese recipes, some use different types of fake cheese and some do not use fake cheese at all, so you will just have to experiment with different recipes until you find one that sticks!.Www@FoodAQ@Com

Mac n' "Cheese"
(Inspired by "The Ultimate Uncheese Cookbook" by Joanne Stepaniak)

1 lb your favorite macaroni
1/2 cup vegtable oil (anything that doesn't have too strong an odor; I used canola; wouldn't try virgin olive)
1/4 cup flour (I used chickpea)
1/2 cup nutritional yeast flakes
8 tsp yellow mustard (standard paste)
3 Tbsp lemon juice
2 2/3 cup soy milk (unflavored; might have to add a little more or less depending on type of flour used or desired consistency)
3 tsp salt
8 oz can tomato sauce
1/4 cup minced garlic

Cook macaroni!. While waiting for water to boil and while waiting for macaroni to cook, do the following:
In a 3!.5-qt saute pan:
Heat oil and saute garlic for a couple minutes
Add flour, yeast, mustard, lemon juice, salt, garlic, tomato paste, and 1 cup milk!.
Over medium to high heat, mix ingredients thoroughly until smooth consistency with a spatula or wooden spoon!.
Heat until the sauce just begins to bubble gently, turning up the heat if needed!.
As bubbles begin to form, add another 1 cup milk!.
Continue to stir until sauce begins to bubble again!.
Finally, add the remaining 2/3 cup milk!.
Control heat so that sauce bubbles gently, all the while continuing to stir!.
Cook and stir for another 3-5 minutes, until sauce becomes thick!.
Drain and add macaroni!.Www@FoodAQ@Com

Best Vegan Mac and Cheese in the entire world!.!.!.seriously

Ingredients (use vegan versions):

1 1/2 cups of plain soy milk
1 cup of water
1/3 cup of tamari or soy sauce
1 1/2 cup of nutritional yeast
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon vegesal or in lack of fancy product, just use salt
1/4 of a block of firm (not silken) tofu
1 cup of canola or vegetable oil
1 1/2 lbs of pasta of your choice preferably macaroni
a relatively large baking pan (like a brownie pan)
1 dollop of mustard (optional)

Directions:

This is very simple and tastes amazing!

Pre-heat oven to 350 degrees Fahrenheit!.

Boil water in a big pot for the pasta!.

All of the ingredients sans pasta can easily go in a blender liquid and powdered this is by far the easiest way and the only was I do it!.

Once pasta is cooked drain I and put it in the baking pan pour the cheese sauce over the pasta!.

Bake until the top of the pasta looks slightly browned and crispy about 15 minutes but not too crispy because that is gross!.

I honestly do not know the serving information or nutritional content I can tell you it feeds a heck of a lot of people and if you are cooking for yourself it will last about 5 days if you eat it for all three meals of the day!.

i would recommend using the same recipe you usually do, but replace the non vegan ingredients with vegan ones!. for example, use soy cheese instead of regular cheese or earth balance instead of butter!. also, in health food stores they have boxes of macaroni and "shreese" which tastes different than the regular stuff of course, but is still good! i especially like it with peas in it :)Www@FoodAQ@Com

also, I made the break from my cheese 'addiction' with Amy's frozen Soy 'n Cheese!. It isn't nutritious, lol!.!.!. but 4 minutes in the microwave and it tastes like the real thing to me!.

also, I use Lisanti's (could be spelled wrong, I already threw the wrapper away) Almond cheese done cheddar style!. It's the closest to real cheese I've found so far and it melts great!.!. if you watch it and check it often!.

You may wish to turn into a vegan which is fine but should you force your child to become one!. I would strongly recommend that you do not if he is young as you may well damage his growth!. Each and every body should make their own choices as far as food is concerned without forcing others into it!.Www@FoodAQ@Com
