4tbsp turbinado or other course sugar
2 cups AP flour
1 tsp baking soda
1/4 tsp salt
2 and 1/2 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp ground cinnamon
1/2 cup canola oil (you can also use vegetable oil)
1/4 cup molasses (blackstrap is too bitter for this, any other kind is fine)
1/4 cup soymilk (I usually end up using 1/2 cup but I live in a dry climate)
1 cup regular sugar
1 tsp vanilla extract
Preheat oven to 350!. Lightly grease two cookie sheets (or you can line with baker's parchment)!. Place the turbinado sugar in a small bowl!.
Sift together the flour, baking soda, salt, and spices!. In a separate large mixing bowl, mix together the oil, molasses, soy milk, sugar, and vanilla!. Pour the dry ingredients into the wet and mix to combine well!. Roll into one-inch (3 cm) balls, flatten into 1!.5 inch diameter disks, press the disks into the turbinado sugar!. Place on cookie sheets about 1 inch apart and bake 10-12 minutes sugar side up, rotating pans halfway through!. Usually the tops will crackle!. Let cool on sheets 3-5 minutes, then move to cooling rack!.
The cookies will feel to floppy when they come out of the oven, but will firm up as they cool!.Www@FoodAQ@Com
