Question: Can you still use an eggplant that has the white mold on it!?
I've had this eggplant in my fridge for a little over a week!. I know it's a while!. I went to use it and it had some mold on the top!. Can I just cut off the moldy part and use the rest!? It is soft and has some brown spots The recipe I was going to use has you peel and cube and boil it anyways!. Can I use it or should I just toss it!?Www@FoodAQ@Com

If you cut off the mold and wash the egg plant really good I guess you could!. I however, would not!!!!!!! Why take the risk!? Mold can be toxic, even in trace amounts!.

Word of advice!. Next time put your eggplants in a vacum sealed bag in the most cold part of your refrigerator!. An air tight container might work the same too!.Www@FoodAQ@Com

I would throw it out!. You're probably better off never eating any produce with any mold on it!. That other person gave good advice about putting it in an airtight bag and in the coldest part of the fridge!. When I buy veggies I try to use them very soon so they don't sit around too long and go bad!.Www@FoodAQ@Com

You can use an eggplant if it only has a soft spot or two, but I wouldn't chance eating one that has went moldy!.

BTW: You want to wash out your refrigerator well and get rid of any mold spores that could be left behind!. They will damage other produce if given a chance!.Www@FoodAQ@Com

It's a good idea to throw out any food item that has mold, even if you cut the moldy part off!.!.!. mold starts below the food surface!. If you ate what was left, you may get sick, but worse still, it won't taste good!.

Eggplant's not expensive; chuck it and buy a new one!.Www@FoodAQ@Com
