There are so many things you can eat, honey, I could go on for DAYS!! Just so you know, though, you can't eat anything with gelatin in it (which a lot of vegetarians don't know; its in most gummy things like sour worms and marshmallows, however read the ingredients because its not in jelly belly's jellybeans)!.
YES! Supplements are important, especially for people new to being vegetarians, having a hard time learning what to eat for a healthy diet!. Iron, protein, calcium and B-12 are the ones you should look after the most!.
Why would a vegetarian who wants to not only eat vegetables be weird!? Vegetarian means a lack of meat, not a gain of vegetables!! I, personally, don't care for a few vegetables myself (cucumbers, cauliflower, beets, etc)!.
Giving you random recipes would be hard for me to do (Seeing as I LOVE food!)!. Instead, I'll first suggest you try eggplant parmesan (my FAVORITE vegetarian dish! Better than lasagna!) and, secondly, I suggest you invest in a recipe book or two (or three or four or eight!.!.!.)!. I personally suggest my favorite cookbook, "Vegan with a Vengeance"!. You can also try a more simple, smaller book!. also, if you're parents (I assume you're a teenager!. Am I right!?) are reluctant to cut meat out of the meals, try an indian food recipe book!. Exciting, exotic food and usually meat free!! also, delicious!. Way better than Mexican, Italian and American food combined!.
I really hope I helped! Sorry I didn't give you recipes!. I think a book would get you a lot further and last you a lot longer!
Good luck and good health!Www@FoodAQ@Com

Fresh vegetables are delicious!.!.!. try a ripe tomato, just bite into it like you'd bite into an apple (but be careful of it squirting!)
I hope you change your mind about vegetables, especially since you are vegetarian!. You may be eating the wrong vegetables!. FRESH veggies are so wonderful!. If you don't like veggies don't bother with the steamed ones!. Try cucumber with a bit of salt!. Mow down on a carrot!. Really, they taste better than you think!. And if you're going with carrots, try the ones with the green part still attached, and do NOT eat the baby carrots, they don't taste as good!. And the ones without thte green still attached tend to be more bitter!. also smaller carrots (but not baby carrots) taste more tender and sweet!.
If you aren't eating fresh or frozen vegetables sorry you're going to be unhealthy, there isn't a lot you can do!. You will have to learn to like veggies or you'll be a very unhealthy vegetarian!. You can pop pills all you want but your skin will lack that healthy glow and you'll feel tired a lot!.Www@FoodAQ@Com

now i know to take vitamins!. youre mostly losing out on B12!. i did a nutrition assignment and surprisingly, i didn't even lack protein!. as for dishes and recipes!.!.!.for the most part i just make any type of pasta!. morning star and boca brands have "chikin" and meatless products to try!. you can still make lasagna the same way you used to, just use the fake products!. so as far as what you can do!.!.!.well to be honest, you can do anything!. its amazing but the vegetarian products now make every substitution possible, so whatever you ate before, look around and you can pretty much still make it!.!.!.!.just without the meat!
i hope that helps a bit!. go to a health food store and there will be a lot of options!. and dont knock veggies! ive grown to love the veggies i once despised!. some of the flavors are amazing! and you dont need to just stick with pasta and salads!.

Some of my favorite meals are traditional spaghetti, penne pasta with lots of veggies tossed with EVOO, black bean burritos, hummus and tomatoes on pita bread, spinach lasagna, roasted veggie sandwiches on wheat or whole grain bread, fajitas with onions, peppers, sprouts, mushrooms, and beans, minestrone soup, and vegetable risotto!. You can go to allrecipes!.com or google any of the names of these and a good recipe should come up!.
You shouldnt have to take a multivitamin if you are making sure you are balancing your meals well but I take Deva Vegan One-a-day multivitamins because I am fairly new to vegetarianism and wanted to be safe with getting all of my nutrients!. I found it at the Vitamin Shoppe!.

What you can eat depends on what kind of vegetarian you're going to be!.
OVO-LACTO (egg-milk) vegetarian: Avoid meat of all kinds (including fish/sea animals), animal fats or broth, animal rennet (in cheese; some cheeses aren't vegetarian, look for ones that say non-animal rennet on the ingredients label or ask the manufacturer), gelatin and carmine/carminic acid/cochineal/E120 (a colorant derived from crushed up beetles)!. You can eat milk and other dairy products, eggs and honey as well as anything else that doesn't have one of the ingredients I listed above!. Ovo-lacto vegetarians may or may not wear leather (depending on their reasons for being vegetarian--ethical vegetarians generally don't wear leather or fur)!.
OVO (egg) vegetarian: Avoid meat, animal fats/broth, milk products (including milk, yogurt, ice cream, etc!.) and ingredients (like lactose and whey), gelatin, carmine/carminic acid/cochineal/E120!. You can eat eggs and honey as well as anything else not on the list of ingredients to avoid!. Ovo vegetarians may or may not wear leather (depending on their reasons for being vegetarian--ethical vegetarians generally don't wear leather or fur)!.
LACTO (milk/dairy) vegetarian: Avoid meat, animal fats/broth, eggs, gelatin, carmine/carminic acid/cochineal/E120!. You can eat milk/dairy products and honey as well as anything not on the list!. Lacto vegetarians may or may not wear leather (depending on their reasons for being vegetarian--ethical vegetarians generally don't wear leather or fur)!.
VEGAN (strict vegetarian): Avoid meat, animal fats/broth, eggs, milk/dairy products and ingredients, honey, gelatin, carmine/carminic acid/cochineal/E120, stearic acid, vitamin D-3 and any other ingredient that is derived from animals (a more or less comprehensive list is here: http://www!.spunk!.org/texts/food/sp001610!.!.!. Vegans also avoid buying/wearing leather, fur, silk, wool/alpaca/angora and any other animal derived fabric/fibers!.
You're going to need to read ingredient labels carefully, no matter what type of vegetarian you decide to be!. Animal ingredients sneak into places you wouldn't expect (gelatin in cupcakes, gum, sour cream and more and lard in baked goods and beans, for example)!.
You shouldn't NEED supplements/vitamins as long as you're eating a balanced diet!. The only thing you might need to worry about is B12 if you're planning on going vegan (although you can easily get your needs met there with fortified soy milk and other fortified foods--just read the nutritional information)!. If you're worried about not meeting your nutritional needs, taking a multi-vitamin/mineral is fine!. Just make sure there's no gelatin or other animal ingredients in the supplements you choose (DEVA makes a line of completely vegan vitamins and there are others on the market as well)!.
For your protein intake, If you don't like tofu (try it before you decide), you can eat tempeh (fermented soy), seitan ("wheat meat"), any of the faux meats on the market (as long as you're not going vegan; if you are, you'll need to check for eggs/milk in them) or protein-rich foods like nuts, seeds and beans!. Peanut butter is cheap, quick and easy, but there are lots and lots of options out there to help you get your daily protein!.
For recipes, I highly recommend two things:
1) VegWeb!.com!. Phenomenal recipes with new ones added daily!. You can find practically any sort of recipe your heart desires (including ones with no vegetables)!. :)
2) Go to the library and check out all the vegetarian/vegan cookbooks you can!. It doesn't cost anything and you can get plenty of ideas for new foods and meal plans!.Www@FoodAQ@Com
