Universal seasoning for grilling tofu?!
I'm having a kebab party this weekend, and one of the options on the table will be pressed, cubed tofu!. How can I marinate the tofu so it has some flavor, but can still be used with such different sauces as mesquite, barbecue, lemon pepper, mango chutney, etc!? Is there one flavor that would be somewhat universal, or do I have to prepare a few different tofu options!?Www@FoodAQ@Com

Tofu is an incredibly versatile food item! You can pretty much treat it like you would any other animal protein!. I have breaded it and baked it, dry rubbed it and grilled it and used it in place of most animal proteins in daily cooking!. The secret is to make sure you use firm tofu and let the liquid drain out!. I use a bowl with a fine screen strainer and a piece of cheese cloth - put your block of firm tofu and weight it down with another bowl or something heavy to help squeeze out any liquid!. Slice or cube tofu as you like!.
For grilling I would not add any moisture by using a traditional marinade but instead use a dry rub:
* 1/2 cup paprika
* 3 tablespoons cayenne pepper
* 5 tablespoons freshly ground black pepper
* 6 tablespoons garlic powder
* 3 tablespoons onion powder
* 6 tablespoons salt
* 2 1/2 tablespoons dried oregano
* 2 1/2 tablespoons dried thyme
or
2 tablespoons Sea Salt
2 tablespoons Black Pepper
4 tablespoons Brown Sugar
2 tablespoons Garlic Powder
6 tablespoons Mustard Seed
Rub your tofu in advance and let it marry with the rub!. You can make a vinaigrette for basting once it's cooked up!.Www@FoodAQ@Com

a standard rub will work just fine!. 3 parts kosher salt, 1 part freshly ground black pepper, 1 part garlic powder, 1 part oregano!. if you want it a little spicier add some paprika or chili powder!. same amount as the smaller parts!.Www@FoodAQ@Com
