My favorite recipe for a vegetarian entree is mushroom steaks!. The most exotic ingredient is soy sauce, and even meat-eaters like them (some don't even realize it's not meat)!. It's also relatively quick to make (about 1 1/2 hours from start to finish) and you can make the patties ahead of time, then cover them with the gravy and bake them about 1/2 hour before your meal!.
These are the ingredients:
1 cup of milk
2 eggs
Soy sauce
2 4-oz!. cans of mushrooms
Med!. sized onion
3 cans of cream of mushroom soup
Oatmeal

My version of black bean soup:
Saute:
about 1 medium diced sweet onion (large pieces if you blend at end) in a few tablespoons of olive oil for about 5 min on med heat!. Then add about 4 cloves minced garlic!. Cook another few minutes!.
Add 2 cans of strained, rinsed black beans!. Add enough chicken or veggie stock to almost cover (water is ok but I like more flavor)!. Bring to boil then simmer for 20 minutes!. While this is simmering, cook rice!. also, finely chop some onion, cilantro and jalapeno (if seeking heat)!.
I personally like to blend my soup and I like mine thick -- don't add salt until you are done cooking - salt to taste - maybe a teaspoon or 2!. Hubby likes his unblended!.
We put the rice and 'soup' in a bowl and garnish with cilantro and onion to taste!. Feta, mexican blend, and other cheeses make for excellent blend-ins!.Www@FoodAQ@Com

my fave is Portabella mushrooms with tomato sause and cheese!. Its like a chicken parmasen and you dont taste the mushrooms!
Take maranara sause and pour a little in the bottem of a cassarole dish so the mushrooms dont stick!. Take the mushrooms spray a little pam on the inside of the cap*making sure that the stem is off*Put the mushooms onthe grill and just make some grill marks!. Take the mushrooms and stick in the cassarole dish!. spoon some more sause into the caps!. Sprinkle some cheese on top, then put in the oven at 400 for 15 minutes untill the cheese has melted!.
I got the resipie off of the vegitarian eppisode of Everyday italian!. On the same eppisode she shows how to make a veggie loaf with lentels it looked soooooooo good!

Cilantro to Garnish

i love love love making taco salad
fry up some veggie crumbles with some onions or chili powder(optional)
then in a big bowl mix lettuce, kidney beans, tomatoe, onions, crushed tortilla chips, and avacado slices!.
put the veggie crumbles on top
and top it off with salsa and fake sour cream! (im a vegan- but i spose you can use real sour cream!.!.!.lol)

3 tab tomato paste
2 or 3 tab of nut butter such as peanut or cashew
4 tab garbanzo juice
2 tab lemon juice
put in food processor and puree till smooth
spread on whole wheat bread or toast or peta bread
