I'm thinking the reason why I'm tired all of the time is because I don't eat enough fruit and vegetables!. Does anyone know of any good recipes, of course, not involving all of this at once but some good recipes I can make with some of these!.!.!.

Oranges
Green apples
Pineapple
Watermelon
Spinach leaves
Carrots
Strawberries

If you do know of any good things I can make out of some of these, may you please tell me!? If you are able to, can you also tell me what would taste really good together as a smoothie!?

My son was sick last week and I made him a fruit salad!. I used fresh strawberries, cantelope, bananas and jarred mango slices!. I cut all the fruit into bite size pieces and used the mango juice which was in a light syrup!. It was awesome!. Pineapple and watermelon would've been good too!.

For the spinach; use fresh baby spinach, sliced mushrooms and sliced onions!. Sprinkle croutons is you wish and try Ken's Raspberry and Walnut Vinaigrette!. It's amazing!.

Carrots can be cut into coins or shredded like cheese and cooked in the microwave with a bit of butter and salt and pepper!. So sweet!.

Oh, just thought of another way to get your breakfast veggies!. It's called hobo hash!. Wash a couple of small potatoes and cube them up!. Mix with a little olive oil and microwave for about 3-5 mins!. In a skillet, cook any kind of bfast meat!. I personally love sausage!. Add potatoes, onions, mushrooms till cooked!. Then add a couple of cups of fresh baby spinach!. It will wilt down a lot!. Top with your choice of cheese!. Sooo good!. I sometimes add sliced tomatoes too if I have them on hand!. Spinach and Mushroom Casserole

2 tablespoons butter
1 pound fresh mushrooms, sliced
2 (10 ounce) packages fresh spinach, rinsed and stems removed
1 teaspoon salt
4 tablespoons butter, melted
1/4 cup finely chopped onion
1 1/2 cups shredded Cheddar cheese, divided

Preheat oven to 350 degrees F (175 degrees C)!. Grease a 2 quart casserole dish!.
Melt 2 tablespoons butter in a large skillet over medium heat!. Saute mushrooms until tender, about 8 to 10 minutes!.
Meanwhile, place spinach in a large pot!. Wilt over medium heat; drain, squeezing or pressing out excess water!. Place in prepared baking dish and top with salt, 4 tablespoons melted butter, onion and 1/2 of the cheese!. Layer mushrooms on top and sprinkle with remaining cheese!.
Bake in preheated oven for 20 minutes!.

Apple Peanut Spinach Salad

2 (6 ounce) packages fresh baby spinach
1 medium apple, chopped
1/4 cup raisins
2 tablespoons chopped peanuts
2 tablespoons olive oil
1 tablespoon sugar
1 tablespoon cider vinegar
1 tablespoon chutney
3/4 teaspoon curry powder
1/4 teaspoon salt

In a large bowl, combine the spinach, apple, raisins and peanuts!. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well!. Drizzle over salad and toss to coat!.

Spinach Tortellini Soup

1 (10 ounce) package frozen chopped spinach
2 (14!.5 ounce) cans chicken broth
1 (9 ounce) package cheese tortellini
1/4 tablespoon dried basil
1/4 tablespoon garlic powder
salt and pepper to taste

In a large pot over high heat, combine the spinach and chicken broth!. Heat to boiling, then reduce heat to low!. Stir in tortellini, and simmer for 10 to 15 minutes, or until the tortellini is cooked to desired tenderness!. Season with basil, garlic powder, salt, and pepper!.

Groovy Green Smoothie

1 banana, cut in chunks
1 cup grapes
1 (6 ounce) tub vanilla yogurt
1/2 apple, cored and chopped
1 1/2 cups fresh spinach leaves

Place the banana, grapes, yogurt, apple and spinach into a blender!. Cover, and blend until smooth, stopping frequently to push down anything stuck to the sides!. Pour into glasses and serve!.

Apple Sandwich

2 slices whole wheat multi seed/grain vegan bread
1 apple; sliced in rounds (cored)
1 tablespoon almond butter


Spread one slice of the vegan bread with the almond butter; place apple rounds on top; cover with 2nd slice of vegan bread!.

Fruit Salsa

1 cup strawberries, finely chopped
1 orange, peeled, seeded, and finely chopped
3 kiwis, peeled and finely chopped
1/2 cup fresh pineapple, finely chopped
2 green onions, finely chopped
1/4 cup yellow or green bell pepper, finely chopped
1 jalape?o pepper, seeded and minced
1 Tbsp!. fresh lime juice


Put all the ingredients into a bowl and mix well!. Cover and chill for several hours or overnight!. Tip: For a quick way to make chips to serve with the salsa, brush flour tortillas with melted margarine, sprinkle with a mixture of cinnamon and sugar, cut into wedges, and bake at 350°F until crispy!.

Place as many watermelon balls in a tall glass as possible!. Pour soda up to top!. Refrigerate for 1-2 hrs!. Drain and refill before dinking

Spinach Salad with Orange Sesame Dressing

1 bunch fresh spinach (6 cups)
1 red or yellow bell pepper, cut into strips
1/4 - 1/2 cup thinly sliced red onion
1 orange, peeled and sliced into thin rounds
1 tablespoon sesame seeds
2 tablespoons seasoned rice vinegar
1 tablespoon orange juice concentrate
1 tablespoon water


Trim off the spinach stems and carefully wash the leaves!. Dry, then tear any large leaves into bite-size pieces!. Place in a salad bowl along with the pepper, onion, and orange slices!.

Toast the sesame seeds in a 400° F oven for 10 minutes!. Transfer to a blender and grind into a powder!. Add the vinegar, orange juice concentrate, and water and blend to mix!. Pour over the salad and toss just before serving!.

Ingredients:
1 bunch spinach, rinsed
10 large strawberries, sliced
1/2 cup white sugar
1 teaspoon salt 1/3 cup white wine vinegar
1 cup vegetable oil
1 tablespoon poppy seeds

Directions:
1!. In a large bowl, mix the spinach and strawberries!.
