Hey good for your mom!. And good for you for helping her gets some raw cheese!. If you are going to consume dairy always always make sure its organic from grass fed healthy cows AND raw (VERY important)!. Pasteurized dairy is not good for anyone (with maybe the exception of organic grass fed butter!. Raw butter is way way better for you though) despite what you have always been told!. Pasteurization kills good bacteria and all the beneficial enzymes and loads of other good stuff in the dairy!.

I am not sure where you live but where I live you can get organic pastures raw milk, butter, and cheese at Whole foods market!.

If you don't have a whole foods or they don't sell it there then you can also order raw cheese off the organic pastures website!. Their dairy products are raw from healthy grass fed cows no hormones/antibiotics!.

One made from unpasteurised milk might be described as raw, but it may also be a little risky, especially for pregnant women (bacteria)!. Other than that, there should be no need for any heat to be applied during the cheese-making process!.

However, as you are asking this in the vegetarian & vegan forum, I think you might like to avoid cheese which is set using an animal setting agent (rennet, rennin, pepsin, or often only listed as "enzyme") - as this is, basically, derived from the lining of a calf's stomach!. Look for cheeses which specify a coagulant or setting agent or enzyme which is of "non-animal" or "bacterial" or "vegetarian" or "plant-based" origin!.Www@FoodAQ@Com

Swiss cheese, for example, is a popular cheese almost always made with raw milk!. However some suppliers tend to make a majority of cheeses with raw milk, you just need to search around!.

It is illegal to buy raw milk, so I assume raw cheese is illegal as well!. You can get dozens of illnesses from drinking raw dairy!. Not a good idea!.Www@FoodAQ@Com
