Spring Strawberry Spinach Salad
Ingredients:
1 bunch spinach, rinsed
10 large strawberries, sliced
1/2 cup white sugar
1 teaspoon salt 1/3 cup white wine vinegar
1 cup vegetable oil
1 tablespoon poppy seeds

Directions:
1!. In a large bowl, mix the spinach and strawberries!.
2!. In a blender, place the sugar, salt, vinegar, and oil, and blend until smooth!. Stir in the poppy seeds!. Pour over the spinach and strawberries, and toss to coat!.

Green Bean and Mushroom Medley
Ingredients:
1/2 pound fresh green beans, cut into 1-inch
lengths
2 carrots, cut into thick strips
1/4 cup butter
1 onion, sliced 1/2 pound fresh mushrooms, sliced
1 teaspoon salt
1/2 teaspoon seasoned salt
1/4 teaspoon garlic salt
1/4 teaspoon white pepper

Directions:
1!. Place green beans and carrots in 1 inch of boiling water!. Cover, and cook until tender but still firm!. Drain!.
2!. Melt butter in a large skillet over medium heat!. Saute onions and mushrooms until almost tender!. Reduce heat, cover, and simmer 3 minutes!. Stir in green beans, carrots, salt, seasoned salt, garlic salt, and white pepper!. Cover, and cook for 5 minutes over medium heat!.

Butter Bean Burgers
Ingredients:
1 (15 ounce) can butter beans, drained
1 small onion, chopped
1 tablespoon finely chopped jalapeno pepper
6 saltine crackers, crushed
1 egg, beaten 1/2 cup shredded Cheddar cheese
1/4 teaspoon garlic powder
salt and pepper to taste
1/4 cup vegetable oil

Directions:
1!. In a medium bowl, mash butter beans!. Mix in onion, jalapeno pepper, crushed crackers, egg, cheese, garlic powder, salt, and pepper!. Divide into 4 equal parts, and shape into patties!.
2!. Heat oil in a large skillet over medium-high heat; use more or less oil to reach 1/4 inch in depth!. Fry patties until golden, about 5 minutes on each side!.

Suki's Spinach and Feta Pasta
Ingredients:
1 (8 ounce) package penne pasta
2 tablespoons olive oil
1/2 cup chopped onion
1 clove garlic, minced
3 cups chopped tomatoes 1 cup sliced fresh mushrooms
2 cups spinach leaves, packed
salt and pepper to taste
1 pinch red pepper flakes
8 ounces feta cheese, crumbled

Directions:
1!. Bring a large pot of lightly salted water to a boil!. Cook pasta in boiling water until al dente; drain!.
2!. Meanwhile, heat olive oil in a large skillet over medium-high heat; add onion and garlic, and cook until golden brown!. Mix in tomatoes, mushrooms, and spinach!. Season with salt, pepper, and red pepper flakes!. Cook 2 minutes more, until tomatoes are heated through and spinach is wilted!. Reduce heat to medium, stir in pasta and feta cheese, and cook until heated through!.

Zucchini Herb Casserole
Ingredients:
1/3 cup uncooked long grain white rice
2/3 cup water
2 tablespoons vegetable oil
1 1/2 pounds zucchini, cubed
1 cup sliced green onions
1 clove garlic, minced 1 1/4 teaspoons garlic salt
1/2 teaspoon basil
1/2 teaspoon sweet paprika
1/2 teaspoon dried oregano
1 1/2 cups seeded, chopped tomatoes
2 cups shredded sharp Cheddar cheese,
divided (use your choice of substitute)

Directions:
1!. Combine the rice and water in a saucepan, and bring to a boil!. Reduce heat to low, cover, and simmer 20 minutes, until rice is tender!.
2!. Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease a shallow 1 1/2 quart casserole dish!.
3!. Heat the oil in a skillet over medium heat, and cook the zucchini, green onions, and garlic 5 minutes, or until tender!. Season with garlic salt, basil, paprika, and oregano!. Mix in the cooked rice, tomatoes, and 1 cup cheese!. Continue to cook and stir until heated through!. Transfer to the prepared casserole dish!. Top with remaining cheese!.
4!. Bake uncovered 20 minutes, or until cheese is melted and bubbly!.

Easy Vegetable Pot Pie
Ingredients:
1 (10!.75 ounce) can condensed cream of
potato soup
1 (15 ounce) can mixed vegetables, drained
1/2 cup milk
1/2 teaspoon dried thyme 1/2 teaspoon ground black pepper
2 (9 inch) frozen prepared pie crusts,
thawed
1 egg, lightly beaten

Directions:
1!. Preheat oven to 375 degrees F (190 degrees C)!.
2!. In a medium bowl, combine potato soup, mixed vegetables, milk, thyme, and black pepper!.
3!. Spoon filling into bottom pie crust!. Cover with top crust, and crimp edges to seal!. Slit top crust, and brush with beaten egg if desired!.
4!. Bake for 40 minutes!. Remove from oven, and cool for 10 minutes before serving!.Www@FoodAQ@Com

I make a veggie lasagna

Riccotta cheese, shredded mozerella, spinach, sliced mushrooms, thin sliced baby carrots, alfredo sauce and al dente lasagna noodles

get a baking lasagna pan (greased) and put a layer of noodles on the bottom, spread a layer of riccotta cheese then sprinkle some shredded mozerella, some sauce, some mushrooms and all the other ingredients, top with another layer of noodles and repeat until the pan is full!. The top layer should be covered with some alfredo sauce and about 15 min before you take out of the oven!.!.!.throw some more mozerella cheese down and bake until golden brown!.

Oven should be about 350-400 for about 30min!.Www@FoodAQ@Com
