Cooking will take some of the nutritional value out of the beans, but there is no way to eat a dried bean unless you cook it!. So what you end up with are beans that are not cooked and that you have to cook - or - beans that have already been cooked and that you just have to warm up to eat!.
As one person pointed out, there is salt in the canned, but I know few if any that don't put some salt in when they cook them from dried!.
I use the dried when I have the time to cook, the canned when pressed for time!. When reading the side information on the can/package of both, you will see that they are the same save for the sodium content!.Www@FoodAQ@Com

I read somewhere that they do lose some nutrients when cooked and in the canning process!. Personally, I buy them dried because I don't like the water they come submerged in, plus they have a lot of sodium!. also, dried beans are a lot cheaper, you can get 4 times the amount of beans in a bag!. Try it!Www@FoodAQ@Com
Canning is just cooking in a sealed container!. I can't see there being a big difference between you cooking them or buying them cooked and reheating them!.Www@FoodAQ@Com
