You could make a spanish tortilla, its not only a good meal, but also easy to do: The recipe is actually for 4 people, so if you are alone just divide by four:
* 700g potatoes or about 5 medium baking potatoes, peeled, sliced and lightly sprinkled with salt
* 6 eggs
* salt
* 1/2 pint of olive oil (or other oil if you dont have it at home)
* 1/2 yellow onion, chopped
* 3 cloves garlic, minced
You now should start it heating ta bit of oil and adding some potato slices, onion and galic- don′t add all potato slices at once otherwise they will stick together. It will take about 5 minutes, medium heat and ocasionally you will have to turn the slices.
Meantime, whisk the eggs with a pinch of salt in a large bowl. Add the potato and stir to coat with the egg. And add that mixture to the very hot oil in the skillett. Lower the heat and shake the pan frequently until it′s half set.
Use the plate to cover the pan and inverte the tortilla away from the hand holding the plate – add oil if necessary and slide the tortilla back into the skillet to cook the other side. Cook until it completly set. Serve it warm with some salad and bon appétit!!
