Here's what I've learned regarding ramen noodles. The packet of seasoning does contain chicken and beef biproducts, The only one that is vegetarian friendly is Oriental flavor.
Top Ramen brand Oriental flavor, which contains no animal ingredients at all, including in the flavoring packet. So by all means, stock up on this vegetarian ramen brand! Look for the blue Top Ramen packages at your grocery store. I would cook with extra virgin olive oil or vegetable oil. Add any veggies you have at hand. You may want to slice them diagonally. I like them this way.

The noodles are fine, but some of the flavor packets have animal fats in them. I believe the Chilli flavor doesn't, but it's been years since I've eaten them. Check the labels first.

I use the noodles in all sorts of things. Stir fries are great with them, I also eat them in homemade soups.
