egg salad sandwich. cheese sandwich. they might sound boring, but if you add lettuce, tomato, onion, mayo, salt, pepper, it actually tastes pretty good. :)

if you want to get fancy, then you can do a mediterranean type of sandwich. you put roasted red peppers, onions, feta cheese, cucumbers, and either pesto/mayo/ranch on it.



Cold vegetarian sandwiches are great with wholegrain bread. Some simple fillings could be:

1. tomato, cheese, lettuce
2. mi go reng, cos lettuce
3. carrots, lettuce, wholegrain mustard, cucumber, tomato, lettuce
4. grilled eggplant, pumpkin, parsley
5. egg, mayonnaise, curry, cauliflower

Hot sandwich fillings could be:

1. tomato, lettuce, teriyaki tofu
2. grilled eggplant, grilled capsicum, lettuce, cucumber
3. cheese, tomato
4. sweet potato, avacado, lettuce
5. Pumpkin and chickpea patty, lettuce, tomato, gherkin

Depending on if you prefer sour, sweet or savoury there are many combinations. The cold sandwiches are best for taking to school/lunch. Hot sandwiches can be grilled or heated once lunchtime.
