CAnned veg aren't THAT bad, they just taste like soft poo.
Of course they're not water, they have fibre, bulk, some nutrients.

As what I answered in another question, fresh veggies aren't always (obviously) "fresh" or packed with nutrition. Having been harvested at best a day or two before sometimes a whole week prior then trucked often tightly packed over hundreds if not thousands of miles, they are also sprayed with chemical preservatives so they will retain their natural color/texture. Some ripening "veggies" such as tomatoes (which are actually a fruit) are picked before they ripen (read before they achieve peak nutritional value). Natural sugars and nutrients degrade over time so when they get to the market, they are sometimes only as nutritious as the box they came in. Some frozen however, are as nutritious, if even more nutrition than really fresh because they were picked at their peak then flash frozen immediately retaining most of their nutrients without artificial preservatives.

The still contain soluble and dietary fiber, and some vitamins. They are an ok source of potassium and phosphorus, too.
