Question: I want to make mustard or buy some that is not made with vinagar. I have bad reactions to vinagar. Any ideas?
I have experimented with making my own mustard using lemon as a substitute but so far it tastes more like horseradish than mustard.

there are three main types of mustard there's brown mustard, black mustard (which is typically the hottest variety) and white/yellow mustard which is what most mustard in the us is made out of. it us usually made with turmeric to add that bright yellow color.

you can make mustard using crushed mustard seeds and any liquid. when the seeds are opened and mixed with a liquid a chemical reaction happens and that's what makes the mustard spicy.old mustard recipes used wine or water but pretty much any liquid will do. the hotter the liquid is that you add to the crushed mustard seeds the less spicy it will be and the colder the liquid is the hotter it will be.

Buy dry mustard (Colman's is a popular brand) and reconstitute it to the desired consistency with water.
