vegetarian sandwich ideas?!


Question: Vegetarian sandwich ideas?
I'm a vegetarian college student...enough said haha. It can be pretty hard to find good, nutritious vegetarian lunch options in the dining halls. So, for lunch time I mainly live off of what I can put together in my dorm room. Since all I have for cooking is a large mini-fridge and a microwave, my options are pretty limited. For the past few years I've been living on PB&J, PB&banana, and tofurkey and other smart deli slices with hummus. I never know what else I could make, so I'm in a HUGE lunchtime rut! I really need to find some fresh, new sandwich options that I can easily make in my room. Any suggestions?

Usually I just do a protein- usually leftovers like marinated tofu, grilled seitan, or tempeh bacon- with lots of fresh/grilled/sauteed veggies- lettuce, tomato, cucumber, green pepper, onions, etc.

You could also get lots of different fruits and nut butters instead os ticking to pbj. Almond-butter-strawberry sandwiches and the like. Mix it up.

I don't really love most 'regular' sandwiches, though- I usually go with a simple burrito or pita bread stuffed with chickpeas, corn, and hummus when I need a quick lunch.



Hummus, tomato, lettuce and whatever veggie I'm in the mood for. One of my favorite sandwiches. Do you just limit yourself to sandwiches? There are plenty of soups that are vegetarian. Veggie burgers. Wraps made with whatever you can think of but tofu is always a fun starting place and then add in other ingredients. Salads of all kinds. Maybe take a break from sandwiches and try some soups, salads and stews.



well for sandwiches there aren't many options with protein....

but we had a vegetarian sandwich at one of our cafes at school that had roasted red peppers (you could buy them in a jar or off a salad bar) and cucumbers, feta cheease and Tzatziki Sauce...or you can buy frozen Falafel patties, those are good. can put them in a pita with some other veggies and the same sauce.



Baked potato with hummus or guacamole, or salsa, or veggie curry, or cheese if not vegan
Pasta with tomato sauce
Pasta with pesto - again re vegan
make a chilli the night before and have leftovers with potato or tortillas
Pitta bread with salad and any of top list
One I love is tabouleh - that in a pitta pocket or tortilla, hmmm

thinly sliced cucumber with a slightly horseradish tinged mayonaise. fresh with pickled offers many layers of flavor. this from a carnivore. but it works. a roasted garlic aioli would work well with sour cream and fresh cucumber.

Lettuce, tomato, cucumber, shredded carrots,cheese and some kind of sandwich spread or dressing.I do different variations depending on what I have on hand.
I also like cheese and pickle sandwiches but I love pickles.



Bread + lettuce + tofu + lettuce + bread = food

Also,

Couscous can be made in the microwave in 3 minutes - mix it with veggies or make Tabouli (which can be stored in your fridge).

Wraps can be made using different combinations of hummus, shredded carrots, cucumbers, peppers, cheese (or soy cheese), lettuce, sprouts, etc.

Mix black beans, salsa, and cheese (or soy cheese) together in a bowl and microwave. Put it on a wrap and you have a nice base for a wrap - just finish it up with some more veggies.

I know you asked for sandwich ideas but soup and salad is always a nice lunch too.


Different salads such as eggless egg salad, mock tuna salad, etc are on the website I included. They take some prep (cutting veggies - no active cooking) but you can store it in your fridge for the week.
