Healthy Vegetarian Diet?!


Question: Healthy Vegetarian Diet?
I've been struggling for how to have a healthy vegetarian diet when I am extremely busy. Often, I work late and can't get home until 8 or 9 at night, so it is difficult to come home to make a good healthy meal. Could any of you provide some guidance and / or recipes for healthy vegetarian eating - for a busy individual that is on the run most of the week?

I work 12 hours shifts. On my days off, I shop and prepare food for the upcoming week. I make and freeze several meals ahead of time. Every meal I make when I have time, I make extra for lunches. Each night before I go to bed, I prepare my lunch for the next day. Takes maybe 20 minutes, if that.

I always have a frozen pasta sauce in the freezer. Stir frys are super quick, especially if you have already chopped your veggies.



Get a slow-cooker (crock-pot). Soups and stews can be started in the morning and be ready by the time you get home. Leftovers make the next day's meal real easy!

Do most of your cooking on the weekends and portion out your meals for during the week. If you want to eat more healthy meals try and stay away from the prepared foods you find at the store -- too much sodium, added sugars, preservatives, etc.
