The only way I eat Tofu is in Stir Fry.
Pine nut & anise cake with blood orange compote
Ingredients
2 cups all-purpose unbleached flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/8 teaspoon sea salt
3/4 cup pure maple syrup
1 cup soy milk
1/2 cup canola oil
2 1/2 ounces silken tofu
1 tablespoon anise extract
1 teaspoon pure vanilla extract
1/2 teaspoon freshly squeezed lemon juice
1/2 cup pine nuts toasted
8 blood oranges
1/2 cup unrefined sugar
1 tablespoon arrowroot dissolved in 3/4 cup cold water
Method
Cake
Preheat the oven to 350 degrees. Lightly oil an 8 inch round springform pan.
In a large bowl, sift the flour, baking powder and baking soda. Add the salt and tir until well combined. In a blender, combine the maple syrup, soy milk, oil, tofu, anise and vanilla extracts, and lemon juice. Puree until smooth. Pour the wet mixture into the dry mixture, and mix well. Fold in the pine nuts. Pour into the prepared pan and bake for 55-65 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan on a rack, then remove it from the pan.
Compote
Juice 4 of the blood oranges. Peel the remaining 4 oranges and cut them into segments. In a small saucepan, combine the orange juice and sugar. Bring the mixture to a simmer and stir in the arrowroot mixture. Stir until the sauce becomes translucent. Remove from heat and let cool. Stir in the orange segments.
To serve, cut the cake into 10 slices. Heat the orange compote until warm. For each serving, pool orange compote in the center of a plate, place a slice of cake on top of the compote.

Always buy extra firm. The best is to fry/sauté it – then it’s chewier. First, remove from the carton and place between paper towels on a plate. I put back in the frig with something heavy on top to press it down. Keep pressed for an hour. Tofu has no taste- it will taste like whatever you cook it in. If you like sweet n sour- sauté tofu in a little oil- cook until it gets golden brown- add whatever veggies and pour jarred sweet n sour on top. Super easy.
This is one of my favorite recipes- the only thing I do different is omit the green chili, reduce red pepper to ? teaspoon and add zucchini. Serve over rice or angel hair/thin spaghetti.
Hot and Spicy Tofu

Ingredients
3 tablespoons peanut oil
1 pound firm tofu, cubed
1 red onion, sliced
1 red bell pepper, sliced
1 green chile pepper, chopped (I omit)
3 cloves garlic, crushed
1/3 cup hot water (I use veg broth)
3 tablespoons white vinegar (I sub rice wine vinegar)
3 tablespoons soy sauce
1 tablespoon brown sugar (or honey)
1 teaspoon cornstarch
1 teaspoon crushed red pepper flakes
Directions
Heat peanut oil in a wok or large frying pan over medium-high heat. Toss the tofu into the oil, and cook until browned on all sides. Once browned, toss in onion, bell pepper, chile pepper, and garlic; cook until just tender, about 5 minutes.
In a small bowl, whisk together the hot water, vinegar, soy sauce, brown sugar, cornstarch, and red pepper flakes.
Pour over tofu and vegetables, toss to coat, and simmer 3 to 5 minutes, or until sauce thickens slightly.

Take the tofu out of the wrapper and wrap in paper towels or clean dish towel. Place a heavy book on top and let it flatten out. Then cut into desired size (I cut in 2" strips or 4" squares). Then I coat them in bread crumbs like mozzarella sticks or chicken parm. You can dip them in marinera sauce as an appetizer or eat it over pasta like chicken parm. Delicious!
remove as much moisture as you can with paper towels...then cut the tofu into cubes.....
in a fry pan put in some olive oil, garlic, minced onion and marjoram....and the tofu of course.....
saute' until onions are opaque.....
then fix some boxed parmesean noodles/sauce and add the tofu saute mixture into it.....YUMMY>>>>
