im looking for the kind that looks like fajita meat

No tofu starts out looking like fajita meat. Try using extra firm or super firm. Freeze it overnight in the original packaging and pop it in the fridge for another day to thaw. Then drain it, place it between paper towels and a dish towel and press it VERY well until no moisture remains. Then you can do with it as you please. It won't be slimy or gross anymore. This is how I make mine.



Tofu is only going to look like fajita meat if it's been prepared that way. Buy some extra firm tofu, take it home, drain & press it well, then wrap it in plastic and put it the freezer for at least a day. When you want to use it, take it out ahead of time and leave on the counter (with a towel under it) to thaw, or just defrost in the microwave. Then you can crumble it up & make your fajita meat with whatever recipe you find. It will probably only require sauteing it with a variety of spices/seasonings. You could also do the same thing with TVP instead and it will be closer to the texture of ground beef (assuming that's what you mean by "fajita meat").
