Have cooking skills. Read the recipe correctly. Try not to burn anything.

It sorta depends on your taste.
My ideal meal would be.... hmmm, this is hard. Ok, Imma go with one indian and one mexican, cant decide.
-Indian: chhole over rice, potato/veggie samosas, batatyachi bhaji (I'm addicted to it lately), and... hmmm... a little bit of dahl
-Mexican: black bean empanadas, tostones, cuban-style black beans (i know, i know! not mexican), stuffed peppers (rice, corn, tomatoes, soy crumbles)

On the other hand, you might hate anything spicy, or not have time to cook something fancy, and do pasta marinara, breadsticks, dipping oil, and a salad. Eggplant parmesan. Or maybe you love middle eastern food, or think I'm insane for going near a chickpea. Maybe you like traditional, in which case you can do cornbread, sauteed greens, grilled seitan (much better than it sounds), a veggie pot pie.
Whatever. You get the picture.
There is no perfect meal, in general, because everyone has different tastes.

A good balance of food groups is a must. Something with a lot of protein should be the main dish. Faux meat, tempeh, tofu or something made with TVP is good. Beans or lentil dishes are acceptable as well. A grain as a side, along with a fruit and a vegetable makes a well-rounded meal.

Tonight we had tacos made with TVP, plenty of vegetables and a side of spanish rice.
I make tofu with steamed vegetables and fruit like mandarin oranges.
