If there's a food you're especially craving, but don't know how to veganize it, you could look it up here: http://veganrecipe.us/ or here: http://www.vegweb.com . You should also check out vegweb's forums, they're way more useful than this site for ideas (like, say, you're allergic to something, they can come up with lots of useful substitutes).
As for simple recipes that don't take a lot of time, I usually spend more time in prep, then simply pull out at heat for five minutes. There's edamame, stir-fries if you have pre-sliced veggies or a food processor, fried tofu you can get at your local asian store (so you don't have to fry it, just microwave it, cheap too), bread in spiced olive oil, hummus in the food processor, cereal bars you can make at home on the weekends (use peanut butter as the binder), crudités.
My favorite website for recipes is VegWeb. If you have a lot of vegetarian recipes, some can be veganized by using soy milk (or other plant milk) in place of cows' milk and egg replacer in place of eggs.
Here's one I adapeted from VegWeb for Smothered Tofu Steaks
1 package of tofu, drained and press (I freeze my tofu as well)
1 small to medium-sized onion
8 oz cremini mushrooms
2 tbsp soy sauce
2 tbsp balsamic vinegar
1 tsp corn starch (or arrowroot starch)
1/2 cup water
Olive oil
Slice tofu into six pieces. Mix water and starch and set aside. Saute onion and mushrooms until the onions start to brown and mushrooms start to soften. Remove from pan. Add tofu slices to pan, adding in more oil if necessary. When browned, add onions and mushrooms back to pan. Add in soy sauce and balsamic vinegar. Add water and cornstarch mixture Cook until sauce is thickened. Serve.
As I said, I adapted this from a recipe on VegWeb, adding in mushrooms and changing the vegan Worcestershire to soy sauce. It's a good recipe and pretty simple to make.

Google is your friend.
That's a funny rant. I said to use google because I knew most your answers would be people refering you to other websites. And it looks like I was accurate...
