Question: What are some simple vegetarian meals I can make?
Recently stopped eating meat yet I don't know if what I'm eating is good. I'm getting bored of the same meals. Could you give me some simple recipes or meal ideas?

Here are a few recipes I have tried so far

Loved this one. It was quick and easy. The longest it took was cutting veggies. (I added tofu the second time I made it)

I like spicy, so I make extra of this spaghetti sauce and freeze some to eat on a busy night. It is so quick, you can make it from scratch in short time

This site has tons of recipes. If you click on recipes and popular, I guarantee you will find something you like.

If you sign up for this challenge, they send you some recipes suggestions every day for a week. If you sign up for the extra two weeks, you get two emails per week. There were some really great recipes and info. There is even a menu you can look at.

I also suggest buying a cookbook. I just bought Vegan Express by Nava Atlas, and so far so good. The meals are quick and simple.



I was the same way when I first stopped eating meat I was bored of eating the same thing but I have learned a lot of different ways to cook things like if I make mac and cheese or spaghetti I mix vegetables in the sauce so its not so boring. If you eat fake meat like I do to make it more tasty I have these fake chicken patties and I put jalepenos and onions and I melt cheese on top of it its so good! I also cook diced potatoes and I melt cheese on it with hot sauce. You just have to find different ways to eat things and change it up so your not bored :)



Orange style tofu with broccoli:

Ingredients:
1 block tofu
1-2 cups broc.
4 scallions
3 teaspoons cornstarch
Canola oil
1 cup orange juice
4 tablespoons soy sauce
1/2 cup warm water
2 tablespoon sugar
4 teaspoons cornstarch

Directions: cut tofu into strips. cover tofu with 3 teaspoons cornstarch. Fill bottom of pan with canola oil and fry tofu and remove when golden brown. Stir fry broc and scallions in another pan with a tablespoon of oil. Let sit on low after cooked. Combine orange juice, soy sauce, water, sugar, and cornstarch and boil. Pour over tofu and add broc/scallions. Stir until sauce thickens. Great with rice!



I have been looking to transition to a vegetarian diet and my research landed me
at this great resource with tons of vegetarian recipes. I think my transition will
be a lot easier with all of these recipe ideas. There is stuff I didn't even think
