how do butchers conserve their meat?!
I can only keep it 3 days fresh in my fridge, but it seems the butcher can keep a piece of meat a week on his glasses fridge, why is that?

Some people put questions about meat in the vegetarian section because they are trolls. But to me in this case it seems you really want to know the answer to your question. So why did you ask it in the vegetarian section? You might want to ask this again in the general food section, you might get an answer to your question.
Probably because their cooler is much colder than yours.
