Red beans and rice. Sautee chopped onions, peppers, and garlic until tender, add a can of kidney beans, and a can of stewed tomatoes, break up tomatoes with a wooden spoon. May add a little water if you need more liquid. Season with chili powder and a little crushed red peeper, or cajun seasoning, salt and papper. Meanwhile, follow directions on a bag of rice to make a pot of rice, and serve the beans over the rice. Any non-vegetarians in the house can grill up some kielbasa sausage on the side. Yum!

There's manjula's kitchen on youtube, but that's mostly Indian (it doesn't use any weird meat substitute crap, but you need to have a well-stocked spice rack).
Other than that, what I do when I'm lazy:
-pasta and edamame with frozen spinach, dressed with an olive oil and garlic sauce
I like 'veggie tacos' , tortillas, then what you want inside...ie..lettuce, tomato or salsa, onion, black olives. and I usually saute some peppers and mushrooms, shredded cheese...then a bit of sr cream and taco sauce...can warm in microwave or eat cold.
