Question: Help! have a relative visiting Saturday---need ideas for Vegan lunch/dinner.?
I just want to give her a simple lunch and to make some sort of vegan casserole that everyone can enjoy for supper. Please---I don't know how to cook without butter or cheese or meat or milk or fish or ANYTHING----I am so nervous----can someone help please?

I would suggest the following, it is very tasty. Stouffer's Vegetable Lasagna

The sauce is a light white sauce. Make a roux with about 1/3 cup flour and 1/3 cup melted butter. Add three cups of milk, 1 tsp salt, and a pinch of nutmeg. Stir constantly til thickened over a medium flame, or you can make it in a microwave in a large glass mixing bowl.

Mix the veggies you named with 1/2 cup Parmesan cheese, 2 cups mozzarella cheese, 2 cloves minced garlic, and 1 egg. Mix together well.

Put a small amount of the sauce on the bottom of the pan, followed by a layer of noodles, veggie mix, sauce, repeat til you've used it all up. Top with buttered bread crumbs and bake at 400 covered til bubbly, 45-60 minutes, depending on the pan you use. Remove cover and allow to brown for about ten minutes. Remove from oven and let it rest for at least 20 minutes. before cutting and serving.

This recipe is for using cooked noodles, but you can use uncooked noodles by adding 3/4 cup more milk to the sauce.

* If you do not want to make it from scratch, you can always find it in the frozen food section of the grocery store.

Spaghetti Bolognese:


4 oz lentils
small can chopped tomatoes
1 onion
1 clove garlic
vegetable stock cube
water
olive oil
pasta
basil

Directions:

Chop the onion and fry in olive oil until translucent. Add lentils and crushed garlic. Fry for a couple of minutes. Dissolve stock cube in boiling water and add enough of the stock to the pan to cover the lentils. Simmer until water has been absorbed. Add tomatoes and basil. Cover and simmer for about 20 minutes until lentils are tender. Meanwhile cook pasta as directed on packet. Drain pasta and serve mixed with sauce. Serve with vegan bread and salad.

Serves: 2 * So you may need to double the recipe
