I never make my tofu right?!
Answers:
Do you press it first? That helps the texture a lot. Freezing it first also gives it a kind of chewier, "meatier" texture. If you are frying it, another tip is to toss it in a little cornstarch before frying. That gives a nice crisp coating.

If it's bitter it might not be a good batch but if it's bad because it's just plain and boring. Here's one of my favorite ways to flavor it, get together; Soy sauce, pinch of brown sugar, shredded spring onion, garlic, ginger, dash of sweet chilli, mix it all together with cubed tofu and marinate it over night and then put it in a stir fry.

My favorite tofu recipes have come from www.101cookbooks.com. The woman who shares her recipes (and beautiful photography) has some creative dishes with a very wide variety of ingredients and flavors and they're all pretty easy to make. Up until I started trying out her tofu recipes, I wasn't pleased with the flavor or texture of how I was making it (I usually was sautéing it in a skillet until lightly browned with a little bit of seasoning and then tossing it in whatever recipe I was making).
My favorite recipe is her Almond Soba Noodles, which has red curry paste, almond butter, soba noodles, tofu, pea shoots, basil, and almonds. I like it with kale and broccoli, too. Check that website out because she has a lot of really great recipes.
How do you usually make it? That would help.
I usually fry it so it's a bit brown and then add to a stir fry. It'll be a bit crispy
If it tastes like garbage then you're making it right. If you want to eat something that ISN'T terrible, stop on down to KFC and get a 20-piece bucket of extra crispy. You know you can't resist the colonel's secret recipe.
