Question: What are a few healthy yummy simple recipes i can start off with in my transformation to being vegetarian?
I'm looking for advice on some really good veggie meals. I'm just becoming veggie and i have found it difficult to make good food for a good price that is healthy and taste good also that is easy to make. any ideas or recipes would be very appreciated.

I don't know what you like but these are some of my favorites that are quite easy:

Stir fry! If you don't know where to start there are a ton of recipes online. It's pretty foolproof tasty if you chop and fry your favorite veggies in soy sauce with ginger or in a sweet Thai chili sauce and then serve it on a bed of rice.

Faux meat staples like soy burgers or PC meatless chicken brushed with honey garlic BBQ sauce.

Pasta (there are even meatless meatballs...so go and add some balls!)

Veggie chili: there are tons of beans out there

Grilled vegetable wrap: my favorite lunch, just grill some red yellow and green peppers, onions, and whatever veggies you have on hand with some garlic and a tiny bit of oil and warm up a tortilla in the microwave and wrap them all up.

Vegetable sushi

Hearty soup like squash soup

Vegetable pot pies

I really love the recipe book Gourmet Vegetarian. It has a lot of creative recipes and some are really simple and ready in under 15 minutes.



I found this excellent book with recipes which is versatile and it gives great
recipes ,it would seem you were dining at a restaurant. So I am no good at
preparing a meal or even making a sandwich for that matter and this helped
me.

you should go vegan - dairy is really bad for you, but here are some basic veggie meals

pasta

beans and rice

soups - tomato - minestrone - cream of celery - lentil

hummus - so easy to make

refried bean burritos

bean and cheese tacos are so good

quesadillas

steel cut oat meal

baked potato

good ol pb&j

salads

stir fry

veggie lasagna

teriyaki tofu over brown rice

quinoa



One of my favorite vegetarian recipes that I make when I want something cheap and don't want to spend a lot of time in the kitchen is a baked potato with melted cheese and veggies on top.

Potatoes are very cheap and nutritious. You can even make them in the microwave, which is what I normally do when I make this vegetarian recipe for lunch or dinner. You can also boil a bunch at one time and then store them in the fridge to use them as needed. Buy them individually or in big bag at the grocery store, depending on how much you like potatoes.

Here is how I like to prepare and enjoy potatoes for healthy, cheap dinners:

Wash a medium to large potato, dry, and place on a microwave safe plate. Cut about four slits in the potato, so that air can escape while cooking.

Then, microwave for 4- 5 minutes on high. You may hear it make sizzling noises while it is in the microwave. This is normal, but if you get worried, stop the microwave and cut a couple more slits in the potato before you continue heating it.

After it is done in the microwave, wrap the potato is aluminum foil for about 5 minutes. When I'm really hungry I skip this step, but it really does help it taste better. Top your potato however you like it. I love melting on cheese and filling my baked potatoes with veggies, such as olives and peppers.
