how to use silken tofu?!


Question: How to use silken tofu?
Its the first time I've gotten it. I know you use it for desserts mostly. But can you also use silken tofu for scramble tofu or "cheese" for lasagna. Does it turn out well?

The lasagne is a good idea, you could try to make a bechamel, maybe blend it with some tofutti cream cheese and savoury (aka nutritional) yeast flakes?



I've never tried silken tofu in lasagna, but i think that real cheese would be better since sometimes tofu gives off a kind of bitter flavor if cooked too much. As for the scramble tofu, it could work, however the tofu may fall apart when you mix it so you should be careful when cooking. One of my favorite ways to eat tofu is in mapu tofu, you might like it. Hope this helps

I personally prefer to use it with stir-fry, but you have to cut them into large chunks, approx 1 inch blocks. It could work well for a scramble. Because it's soft, it would work out better for someplace where a fresh cheese (like mozzarella or ricotta) would normally be used, but not something to replace a cheddar or provolone.
