Quorn sausage casserole-------------------------
2 tbsp Spanish olive oil1 pack of Quorn sausages cut in to slices on the diagonal
2 onions, thinly sliced2 cloves garlic, finely chopped1 red pepper and 1 green pepper, diced100g sweetcorn1 tbsp smoked paprika 2 tsp mild chilli powder100ml sherry1 x 400g tin chopped tomatoes1 x 400g tin broad beans or cannelleni beans drained150ml/? pt vegetable stockSalt and freshly ground black pepper to taste1 bunch flat leaf parsley, finely choppedHeat half the oil in a large frying pan and brown the slices of sausage until lightly browned. Using the remaining oil, fry the onions and garlic until softened, add the peppers to the pan and continue frying. Add a little water if necessary to prevent sticking. Stir in the sweetcorn, paprika and chilli powder and cook for a few minutes. Stir in the sherry.Add the tomatoes, beans and stock. Return the sausages to the pan and season with salt and freshly ground black pepper to taste.Cover and simmer for 10 minutes, and scatter over the chopped parsley.

6 Quorn sausages cut in to slices on the diagonal (if using frozen sausages, allow to defrost for 30 minutes at room temperature until soft enough to slice, then continue cooking from frozen)
2 onions, thinly sliced2 cloves garlic, finely chopped1 red pepper & 1 green pepper, diced100g (1/2 cup)sweetcorn1 tbsp smoked paprika2 tsp mild chilli powder100ml (scant 1/2 cup) sherry or red wine
1 x 400g (14 oz) can chopped tomatoes
1 x 400g (14 oz) can broad beans or cannellini beans, drained
150ml (2/3 cup) vegetable stocksalt & freshly ground black pepper to taste1 bunch flat leaved parsley, finely choppedHeat half the oil in a large frying pan and cook the slices of sausage until lightly browned. 2 x 400g (14 oz) cans chopped tomatoes2 tbsp red or green pesto4 tbsp tomato purée1 pack Quorn Mince (Quorn Grounds)2 tsp dried oregano350g (1 lb) dried spaghettishaved Parmesan and torn fresh basil leaves to serve (optional)Heat the oil in a pan and soften the onion and crushed garlic until soft, then add the finely chopped carrot. Cook for 5 minutes.Add the tomatoes, pesto, tomato purée, Quorn Mince (Quorn Grounds) and oregano, stir well, bring to the boil and simmer for 15 minutes. While the bolognese is simmering, cook the spaghetti according to the pack instructions. Drain the spaghetti, place in a serving bowl, pour the bolognese sauce over the spaghetti, fork through and serve. Scatter over shaved Parmesan and torn fresh basil leaves if you wish.
