Vegetarian pasta and lasagna are easy to make and pretty cheap. If you really want lasagna, just without the meat, ask your mom to leave a section for you that is filled with a little extra cheese and maybe some veggies, like mushrooms or tomatoes.
Making your own vegetarian pasta is another cheap and healthy option. Try this veggie fettuccine Alfredo recipe.
All you need is a bag of any style pasta that you like (such as bow tie or angel hair), a can of Alfredo sauce, and a bag of any type of frozen veggies that you like. ( I normally use frozen peas and mushrooms, but any kind of veggies are fine.)
Bring a large pot of water to a boil. Cover it with the lid to help speed up the process. Add desired amount of pasta. (It may be a good idea to cook a lot now, then enjoy the leftovers later.)
Cook pasta until it is tender. A good test is to throw a piece against the wall, then if it sticks it's done and ready to eat. (I didn't believe this tip until I saw a friend do it and realized that this actually works fairly well.)
Drain the pasta, carefully. Run cold water in the sink as you do this, in order to prevent damaging the sink, but without running it over the pasta. Next, add desired amount of sauce and veggies. Stir well.

You could make some veggie lasagna. Just make it the same way your mother makes it substituting the sausage with firm tofu, mushrooms and spinach, or any other favourite veggies.
Just use the food processor to blend the tofu and spinach together and use it as a layer in the lasagna.
Easy. And you can put any leftover in the freezer for the next time your mom makes a dinner you can't eat.
Grease a square glass baking dish and spray with cooking spray
Trim the ends off a bunch of asparagus so that they fit in the pan. Drizzle some vegetable oil over the asparagus and season with salt and pepper.
In a bowl, combine 2 tablespoons vegetable oil and half a cup each of parmesan cheese and panko breadcrumbs. Season with salt and pepper, and, if desired, red pepper flakes to taste.
Sprinkle the seasoned bread crumbs over the asparagus and bake at 375 for 15 minutes.
Drizzle a little balsamic vinegar on a plate and put a serving (half the dish) of the topped asparagus on top

Whole wheat bread with hummus or peanut butter (you can toast the bread) with Avocado on the side. You can also get some baby carrots and pre-washed beans to go with the hummus. If you are vegetarian and not vegan, you can drink a glass of warm milk at night. Good luck!
