Converse all stars are made of canvas, so they are suitable for people who don't wear leather. However converse is owned by Nike so you are giving money to a company which exploits poor people in developing countries.
I know a vegan skater called jeff riley or something had a vegan shoe with vans several years ago. Not sure what they have now. But if a shoe contains leather or suede then it is not vegan. There may be some other material used in shoes which are not vegan, but these are the most common items you will come across.
The authentic vans are vegan. Another option are Macbeth shoes.
You phrased your question as if you would eat the shoe:) , they are made of canvas, and rubber, some synthetic materials. The exception would be the ones with leather uppers.
