the "Amy's" range of vegetarian stuff is amAYZING.
Burriitos, enchiladas, lasagna, spaghetti, curries, OMG they have amazing stuff.
You could ask her to buy stuff to make indian curry, peas, potato, tofu and curry sauce, with rice.
Or baked potato and chese n stuff.
Or lots of beans and different veg and make a soup with wholewheat pita.
How about stir-fry? Peanuts, sweetcorn, beans, broccoli, soysauce, garlic, add some oil in first, stri fry the veg, add the nuts and soysauce, then add noodles.
How about instead of telling your mom what to buy you, you offer to go to the store with her and help her shop (or, if you are able, do the shopping yourself... even if you can't drive, you can ask Mom to drop you off at the store and do the shopping while she runs another errand). Mom probably would be happy to pay for some tofu, tempeh, fruits and vegetables, beans, and whole grains if you were going to relieve her of her shopping duties.
I eat lot of soup lately. I also love Indian food and Italian-American food. I will often make a big pot of vegetable and bean soup and eat that all week. I also eat sandwiches of all kinds. They're great toasted, untoasted, hot, cold, with bean spread, with veggies, with fake meat, with cheese... you name it, it can be good on a vegetarian sandwich.
I suggest stocking up on staples: onions, garlic, canned tomatoes (sauce, paste, chopped, whole), canned beans (I use white the most, but black and kidney also have their place), dried legumes (split peas and lentils cook the fastest), brown rice, and a few cans of ready-made tomato sauce and soup (whatever kind you like). You should also grab some dark leafy greens, peppers, celery, potatoes, squash, etc. Get the softer veggies on a weekly basis. Do the same with fruit. Fresh fruit is great for you and can be lovely on a salad.
You should also learn to cook so Mom doesn't have extra work!
I have helped my mom with the shopping and cooking since I was ten, even before I started to cut back on (and eventually give up) meats.
Morningstar burgers or "chicken" or maybe beans to make bean tacos with all the fixings(cheese, lettuce, salsa, rice). there are so many options. just make sure that if you are going vegetarian to eat enough.
Spaghetti bolognese with Quorn mince??
or perhaps buy tofu and use it in a pasta dish?
