Question: Vegetarians does this sound like a good meal: Noodles, Shallots, Mushrooms, Carrots, Lentils?
I'm going to let it cook until it gets a lil pastey like a think sauce, and serve it over noodles

Sounds good with the right spice. I would either leave out the lentils, or leave out the noodles. One or the other.

If you have a food processor. I would finely chop up the raw carrots and cook them in water and when they are almost tender add the lentils and continue to cook until the lentils are cooked then keep warm.
Separately, saute the shallots in a little olive oil on a medium in a nonstick pan. When the shallots are half cooked add the mushrooms (cut into quarters or thick slices) and continue to cook stirring once in a while. When the mushroom is also brown add a few Tablespoons of vegetable stock and turn the heat down and cook until the stock has been absorbed into the mushroom shallot mixture.

*I would add a small amount of chopped fresh herb to the carrot/lentil mix
As for serving with noodles? since you didn't say whether the noodles are Chinese or a Italian egg noodle it is hard to advise. However if you use noodles then plain boil them drain and stir in some sweet Thai Chili sauce. I would then serve the the food by keeping the 3 components of the dish in separate on the plate (in other words make a little neat stack of chili flavored noodles, then a pile of the carrot/lentil mix (making sure the noodles had absorbed most of the water during the cooking) and then a pile of the shallot/mushrooms.

This way you have a contrast of flavors and textures.

Sounds good but add lots of spices. Try basil, rosemary, maybe some hot red pepper. Do not make it plain!
