There aren't really any bad types, it's just that some should be only eating in small amounts but others you can eat more often. Fats you shouldn't eat often are those which reduce your good cholesterol or increase your bad cholesterol. Saturated fats are those which raise your bad cholesterol and unsaturated fats can raise your good cholesterol and in some cases lower your bad cholesterol. But you can't get anything which is either all saturated fat or all unsaturated fat, as the oil you buy is always a mixture of both.
A saturated fat is a long chain of carbon (C) atoms with hydrogen (H) atoms attached and looks like this: http://forkbytes.com/wp-content/uploads/…
An unsaturated fat has some of these H atoms replaced by an extra connection between two of the carbons called a double bond. A monounsaturated fat has just one double bond, a polyunsaturated fat has two or more: http://tinyurl.com/47vxvdz
Coconut oil is high in saturated fat and you shouldn't eat too much of it. Instead vary the oil you use with sunflower, canola or olive oil which are lower in these fats.
Another thing you need to watch out for is trans fats. This gets a bit complicated, but since fats are 3 dimensional they can twist which changes their conformation. This occurs when the molecule is stressed such as exposure to high temperatures in cooking or during processing such as "hydrogenation", where the double bonds of an unsaturated fat are replaced with H atoms which allows the fat to become solid at room temperature. Basically what happens is the bond between two carbon atoms is weakened and twists, and looks like this: http://tinyurl.com/6xej7xq
Anyway, the shape of the fat is important because we use them to build things in our cells and a trans fat is the wrong shape which affects how well our cells can function. There is quite a lot of evidence indicating trans fats may have a role in the development of preventable diseases.
So the best strategy is to use vegie oils which are low in saturated fat, don't cook them at very high temperatures and have a healthy diet overall eating lots of fresh fruits and vegies and you'll avoid increasing your risk of various diseases.
