Soya base ones like Tofu, TVP a mince like dried tofu product, seitan and tempeh, but these 2 can have a wheat derivative, Quorn is made from a veg base and is similar in value to mushrooms.

TVP is made from made from defatted soy flour, a by-product of soybean oil production. It contains no gluten. You can get it in either ground or chunks, and it need to be soaked (reconstituted) before using. It takes on the flavor of the soak liquid, and a mixture of soy sauce, wine, and a touch of liquid smoke works well..

TVP has the additional advantages (over other analog products) of being dirt cheap (Whole Foods sells it in bulk) and lasting for years without spoiling.

Quorn is not vegan, and seitan is certainly not gluten-free. Tofu is of course, gluten-free, and you can also find gluten-free tempeh made from rice, millet, and soy.

Soy Curls are a wonderful chicken substitute made from the whole soybeanso they're much healthier than faux meats made from isolated soy protein.

Maui Taro Burgers and Sunshine Burgers are gluten-free. (I love Sunshine Burgers!) And Dixie Diner makes gluten-free ground beef and strips: http://tinyurl.com/4zfuopk
