Morningstar sausage is great! I love the spicy sausage and the regular, but I'd avoid the maple. it's not so good. i also love the fake bacon they put out. As far as recipes go, we like to take the morningstar sausage crumbles and mix them with a can of amy's vegetarian chili. It's really good and pretty close to the real thing. Also, tofu stir fry, with frozen vegetables and brown rice (buy in bulk) is good, quick, and easy. Another thing is to get tofu, cook it down with spices, and add it to tacos instead of using ground beef.
I actually find being vegan has cut my grocery bill down a lot. I use beans, legumes, nuts, etc as my protein sources.
Tofu is unnecessary, and actually is a processed food. I am very much not a fan of processed vegan food. Sausage substitutes are equally, if not more, crappy than tofu.

also, yes there is soy sausage---but mock meats are a luxury. remember, no matter how bad you feel that you cant have sausage---that pig had it WAY worse.

It's true that meat and dairy are subsidized greatly, but even then, the cost of vegetarian meals is far cheaper than a good quality steak. My food bill is lower now that I eat simply and make my own meals instead of relying on packaged convenience foods loaded with unhealthy ingredients.

Fake meats are unappetizing and unnecessary. They are loaded with fat/oils and additives. Just eat a combination of legumes, whole grains, and leafy greens for all the protein you need. Any vegan cookbook can help.

Any legume is a better substitute than soy. Soy is bland and typically sweetener or artificial flavorings must be added. Many cultures around the world eat legumes and whole grains for breakfast. Leafy greens have far more calcium and nutrients on a per calorie basis than milk. Sadly, some of my friends now must avoid wheat, soy, corn, dairy, and other foods because of genetic modification to these foods. They are severely allergic to the recent wave of products. Fortunately, you can find many non-GM foods and non-Gluten foods on the market.
