Rather than a specific book (I know many), the best thing for YOU might be to check out a local bookstore and head to the vegetarian/vegan section (stores in the USA and Canada have them for sure----not sure about other locations), which might be encompassed in either the "cookbook" section or "nutrition" section, or may have a section all its own. Leaf through a few books. Some books are predominantly nutritional information and how to live a vegetarian lifestyle, and others are a mix of info and recipes, and others are predominantly recipes. Find one that suits your needs. The information they focus on may also vary from book to book. One might focus more on the PRODUCTS to buy, and the additives to avoid, others might focus on being a low-budget individual, other ones might focus more on non-meat sources of things like omega 3, zinc, iron, protein, vitamin B6, vitamin B12, riboflavin, etc. So, really, it depends on what you WANT and what you already know. I guarantee you'll be able to find something that fits with YOU though! =D
I already had a vegetarian cookbook with many vegan recipes, so I used that. But I didn't transition. I went from eating meats and such one day, to vegan the next. Beware..the first week you'll be feeling yucky. Only drink water and 100% juice. Pop and most fruit beverages are very unhealthy. Don't take any medicines for feeling yucky. The book "Cooking Light Way to Cook Vegetarian" (published by Oxmoor House) is great! It has delicious recipes with great pictures and instructions as well as nutritional information for vegetarians! You can probably find it at Borders or Barnes and Noble.
