Tacos made with refried beans, kidney beans, tomato paste, onions, garlic, mushrooms and spices is always an inexpensive and quick meal. Chop up all the salad that you want..tomatoes, greens, gherkins, olives, grated carrot, grated cheese, etc. I usually make guacamole (avocadoes, garlic, salt, lemon juice or vinegar and blend) makes a great topping or you could use sour cream. Put all this out in bowls or on a platter and get everyone to help themselves. Its a fun way to eat for adults as well as children and the colours look amazing when set up. Have fun! Right now I have a thing for tofu coated in shake and bake and fried...with rice pilaf and peas. The secret to making the best tofu is buying extra firm, freezing it in the original package, thawing it in the fridge for a day and draining it VERY well by placing it inside some paper towels and a dish towel and squeezing it between 2 dinner plates.
I can make the meal described above for 4 people and it only costs 8.00. So that kind of blows that "vegetarian is SO expensive" thing out of the water :)
Another thing I like to make is tacos. I just use boca crumbles instead of beef. Everything else remains the same. I buy taco shells, taco seasoning, vegetables and the boca. I already have "better than sour cream" and salsa on hand. This is another meal that costs under 10.00 for a family of 4.
i know if i have to eat another vegetarian lasagne in a pub i may scream :) its always the veggie option!
for me the best veggie meal is mushroom risotto - come to think of it any risotto! arborrio rice , veg stock and what ever veggies you got lying around in your fridge (and a onion & garlic if you fancy it) - Every pack of arborrio rice has risotto recipe on the back :) its really easy but you have to stand near it and ladel in some veg stock every 5mins - i just grab a chair and a book and sit there for the ladling long haul (about 40mins) .

Tacos made with morningstar or boca crumbles - just saute with taco seasoning and serve with tortillas, shredded cheddar cheese, tomatoes, lettuce, sour cream and hot sauce.

Anything Indian. Look up some indian recipes. Very tasty and flavorful. Much better than your typical salad! But, because salads are very cheap and can be very delicious - here's something yummy that I like to eat.
Salad (mixed greens, I prefer the type with spinach leaves)
Flax seed oil
Lemon
Feta Cheese
Salt and Pepper to taste
Get your salad in a bowl, add the flax seed oil first, usually a teaspoon works well and isn't too much, then squeeze some juice from your lemon (about a teaspoon + depending on the size of the salad you are making), feta cheese crumbles on top (this is optional if you don't eat anything with milk in it) and then top with salt and pepper. Freshly ground is always the best.
I like a spicy pasta dish, (pasta of any shape you like, I use whole wheat shells), spicy tomato sauce (a good jar brand, I am lazy) with lots of sauteed onion, green/red peppers and mushrooms. Serve piping hot with grated parmesan on top (the good stuff, not the crap in a can).
Serve with your favorite salad and garlic bread.
Optional garnishes - grated lemon zest and copped parsley, or red pepper flakes if you like it with a bite!
Stuffed peppers and tomatos :) soooo yummy!!! stuff with cous cous or rice....look on the internet for variations of what to put in the rice or cous cous fillings, i like pine nuts and chick peas and mixed vegg!! xx
