I'm not vegan but I can think of things you can take with without a cooler. Most whole fruits and veg will keep quite a few days without refrigeration-just bring utensils to prepare for eating. Nuts and nut butter, crackers, bread, canned beans, rice in pouches, dried fruit. I also believe I wouldn't be too concerned about a few restaurant meals here and there-it's a nice idea but hardly possible to avoid everything unhealthy 100% of the time.

Nonsense. You can get a salad or a bowl of pasta just about anywhere. And there are plenty of portable vegan foods- apples, bananas, oranges, carrots, lettuce, tomatoes, celery....
Are you assuming that vegans live on Tofurkey?
Food is not de facto unhealthy by virtue of being made by someone else whom you paid.
That's silly.
Of course storing foods from home will last, if they're not required to be refrigerated.
