What staples in my kitchen should I have on hand as a beginning vegetarian?!

Question: What staples in my kitchen should I have on hand as a beginning vegetarian?
So far I have only been eating bread, cheese pizza and salads at night and I want to eat healthy meals as a vegetarian. What should I have on hand to help me in the kitchen.

Answers:

Olive Oil

Fresh Herbs

Vegetable Broth

Onions..Celery..Carrots...Garlic

Plus, veggies that eat like meat....Eggplant, etc

PLan your means around veggies that are in season so you can find them in plenty, and cheap, not to mention the benefits of trying to get produce that is fresh and local.

Spaghetti Squash, acorn squash, corn, zucchini, tomatoes, bananas, brussel sprouts, potatos.

Soups are an awesome option. If you learn to make your own bread it is a real cost saver. I make all of mine and it is really simple, and cheap. (Plus you know what is in it)

Just try to buy fresh and that will be a big improvement towards a healthier lifestyle. Good luck

Try to have your favorite fresh fruits and vegetables on hand. I avoid buying these items in bulk though because if I live by myself and I either get tired of them or can't finish it all before it goes bad.

Also, if you are a new vegetarian consider having meat substitutes on hand. There are a lot of vegetarian and even vegan "meat" options available from lunch "meat" to hot dogs and even bacon. These come in handy when you crave meat in the beginning.
