Vegetable sticks for dipping and there are many pasta vegetarian salads.

Check out vegetarian strombolis. There are a number of recipes like these

Roasted veggies make a great sandwich.
Look at roasted red pepper spread (you can make it vegan with vegan cream cheese).

Add-
If you want to do build your own, I would put out things like the roasted red pepper spread, veganaise or mayonaise (depending on whether people are ovo-lacto or not), mustards, lettuce, tomatoes, roasted veggies, onions, sprouts, vegetarian or vegan cheeses.
Avocado or guacomole is great on sandwiches.
You could put out falafel, hummus. If lacto is ok, tzatziki with the falafel is great.

Stick to the hoagie idea if you know where to purchase good deli substitutes.
I like Tofurky's deli slices, but I wouldn't get any faux cheese. Most is friggin'
disgusting unless it's Daiya, and that has to be melted. You can make soups
too, harty salads, pastas, flavored beans and rice ect.

Dot...dips, so long as there's no meat in them, are vegetarian. Not vegan, but vegetarian.

I make veggie sandwiches..vegan. Get veganaise. Mustard is good as well. Use vegan bread.

you can go with a caterer .They will provide you best veg snacks in your party,

um.. chips and dip are vegetarian? sounds rather processed foody to me.. which most likely has animal processing in it's ingredients..

better luck next time.. maybe put this into catering or fast food.... for better service.
