Is seitan available in Canada? I've never seen it.?!

You may have to try a specialty Asian market, because I know I've never seen it in mainstream grocery stores.
I'm north of Toronto, and I've never seen it, although I suspect there are a few stores in the city or closer than I am that may carry it. I kinda gave up looking!
That being said, personally I've solved the problem by just making my own seitan. It's pretty easy to make, and the main ingredient, gluten flour, is readily available at Bulk Barn in bulk quantities, or as the Bob's Red Mill Vital Wheat Gluten at most health food stores or in the Natural Value section of Loblaw's company stores (Zehr's in my case). I make a big batch every few weeks and just store in the fridge or freezer, depending on what I plan to make. It's also nice because I can add any base flavourings (or not) depending on what recipes I plan to make. Saves me steps later on.

In area without a large Asian population, Health food store with a large selection and rural area outside major centre then it is not easy to find, I am a former chef, worked all over Canada and abroad, I am fortunate to live in Toronto, where we have the largest Asian and Caribbean communities in North America, in store that are run by the Loblaw's/G Weston Company, like Zehrs, Loblaw's, Canadian Superstores you may find it in there organic and health food sections refrigerated section, in Asian stores it is in around the Tofu's, Tofu balls and Tempeh another type of pressed tofu.
