vegetarian dish that pleases meat eaters?!
Answers:
I have made a vegetarian chili for dozens of my meat eating friends, and they all love it. I get frequent requests for the recipe, and a lot of folks don't realize it's vegetarian until I tell them. I use veggie (fake beef) crumbles- Morningstar or Boca brand to make it seem meatier.
Put a big pot on medium heat and cover most of the bottom with olive oil. Dice and add to the pot 2 large bell peppers (any colors you like) and 1 medium yellow onion. Cook on medium for about 10 minutes, until peppers begin to soften.
Add 4 cloves minced garlic and 1 bag veggie crumbles. Then add the spices, here are my rough estimations (I really just do this to taste): 3 tbl ground cumin, 1 tbl ground red pepper, 1 tbl chili powder, 1 tsp salt, 1 tsp pepper, 1 tsp onion powder. Stir the spices to coat the veggies and beef, and cook 2 minutes, stirring a few times.
Add 1 can diced tomatoes and 2 small cans tomato sauce (or just 1 doubled sized can of crushed tomatoes). Stir to combine, cover and cook 10 minutes. Add 2 cans beans (I like 1 can black, 1 can kidney), replace lid and cook another 10 minutes, or until the peppers are tender. You can add more tomato sauce or tomato juice at this point, to make it as wet as you like it. Also, you can adjust the spices here, and add hot sauce if you want it extra spicy.
Finally, add 1 can sweet corn, lots of chopped green onions, and stir. Serve with shredded cheese, more green onions, sour cream, fritos, corn bread, etc.
Enjoy!
Me! I've been vegetarian for 16 years, and I'm married to a meat lover. Creative cooking is a must.
Rising Moon makes many vegetarian and even vegan products that look and taste pretty much like "real" food. You can google them to find out where you can by products like that in your area. They have things like lasagna, pizza, raviolis, spaghetti sauce, etc.
Pizza also can be a good choice as you can get different toppings and the people who don't want the meat can have the cheese and veggie pizzas.
Many vegetarians are quite content to eat meals with non vegetarians, they just won't eat the meat items.
There are many varieties of vegetarianism, personally I suggest asking the two vegetarians what they suggest. They might not mind you having meat around, or they might have lots of recipes/ideas you can use that would please everyone.
Kudos for you for taking everyone's feelings into consideration!
You could have a meatless spaghetti with garlic bread and a veggie filled salad.
You could even have some meatballs on the side that the meat eaters could put on top of their plate of spaghetti. They have many frozen types of meatballs to chose from, all you have to do is put them in a bowl and heat them up in the microwave.
There are many omnivores that don't eat meat in every meal, I know I don't.
Mashed potatoes, baked french fries, onion rings, coleslaw, veggie lasagna, spring rolls, vegetable fried rice, BBQ vegetables with potato, hummus with pita chips, spicy couscous, tortilla chips with salsa and guacamole, veggie + fruit platters, potato chips, vegetable soup, chickpea salad, falafel wraps, bean chili, vegetable curry, spicy indian dahl, sweet potato burritos, bean quesadillas, coconut curry tofu, pasta with tomato-garlic-basil marinara sauce, garlic bread, stuffed vegetables, bean casseroles, portobello mushrooms and lemon sesame fettucini, etc.
All of the above is vegan, good luck. ^_^
Now I'm hungry.
You can't go wrong with lasagna primavera ( http://i581.photobucket.com/albums/ss251… ), minestrone soup ( http://i581.photobucket.com/albums/ss251… ), and garlic bread.
The lasagna primavera and minestrone soup recipes are from Betty Crocker Easy Everyday Vegetarian ? 2006.
A cheesy pasta dish (stuffed shells or lasagna) would do the trick. A cheese souffle is a lot more festive and will impress everyone.
My lasagna made with mushrooms spinich and stuff is a hit. Also a nice veggie stir fry is great or veggie pasta of some sort
Omnivore hostess lol
I second the vegetarian lasagna. Just as long as it has delicious ricotta in it im sure everyone will be happy :)
eggplant parmesan and salad and garlic bread you can make a regular lasagna too, in case one person doesnt like eggplant.
Cheese pizza is always a good choice :)
How about making two dishes a small one for the 2 veggies and a larger one for the meat eaters.
