Question: How can I make my vegan chili thicker?
Less soupy.

Answers:

Start the chili by sauteing some onions until soft, then add a can of tomato paste. Cook them together over medium heat, stirring constantly, until the paste starts to darken. This is the sugars caramelizing. Once the excess water is out and the paste is well browned, add you regular tomatoes. The cooked down paste will thicken the sauce and give extra tomato taste. There are many options here. You could simmer for longer (so that the amount of water is reduced and the chilli thickens), You could add flour or cornstarch, or arrowroot. What about adding something which would absorb water - rice or pulses.

What do you have in your store cupboard that you could add?

What could you subtract e.g. water.

You don't have to stick to the written recipe. Have an adventure and make it up as you go along.

You add a bit of flour. Just a little at a time though because wow, it really is great at being a thicker lol. Wait around 6 minutes before you put anymore in to check thickness. Good luck!
