You could have a tofu casserole.
Chop tofu (or wheat gluten or veg mince), into chunks. Brown tofu in a frying pan in a little oil (add spices: chili etc) or in casserole pot.
Add any veges (firm veges, so they don't disintegrate too much) you have: carrots, potatoes, turnip, swede, sweetcorn, (no firm recipe, whatever you've got).Add tins of kidney beans, chickpeas, stock cubes and enough water to cover etc
You could drop in a garlic clove or two and remove it before serving or add to the tofu above.
Simmer slowly for an hour. Stir in some cream and serve with some brown rice, wholewheat noodles or wholemeal bread and butter on the side.
Yum.
Rather than copy a bunch of recipes here, I'm going to give you links to "baked dishes" and casseroles we like (or that are similar to my own recipes) and you might like too.
We eat a lot of all kinds of beans. If we cook a whole pound, we'll eat the beans once as soup and then make casseroles with the leftovers. Often, I have to cut a recipe in half or even quarters to avoid having leftover leftovers. Here are some tasty options:

Then there's pasta, which makes excellent casseroles:
