Vegans: What are some things to eat which are low carb?!


Question: Vegans: What are some things to eat which are low carb?
...other than tofu and nuts?

I LOVE grains aha but I eat too much of them. I'm a new vegan (was lacto-ovo vegetarian) but now I'm fully committed to going the whole distance :D I'm just having trouble finding low carbohydrate meals since, as I said.....I eat so much grain and fruits.

Otherwise, there's always Tofu, broccoli and cauliflower, both of which can be a substitute for pasta in most recipes (except lasagne, obviously, lol) :D

It's worth bearing in mind that all carbs aren't bad for you, there's two types of carbohydrate- simple and complex.
As long as you eat wholegrain rice and wholemeal pasta you're actually doing your body more of a favour than cutting carbs entirely, particularly for weight loss and added energy.

Also, the chocolate's probably there because "Unknown" was a description of his brainpower not his identity. :D

Make a vegetable soup!

You can add so many things to it. (adding beans and corn sometimes and crumbling chips over it is really goo, but less low carb)

Veggie stock is easy to find. I promise it's super easy. Just chop up what you have and throw into a pot. Plus soup keeps me full for a really long time.

Vegan



Soy products- tempeh, tofu, fake meats, etc- veggies- except for potatoes- and nuts, nut butters, seeds, and oils are the only low-carb things I can think of in a vegan diet.

Why is chocolate included in Unknown USer's answer? Vegans can eat chocolate, so its not even right.

Asparagus, green beans, peppers, mushrooms, eggplant, cauliflower, broccoli, spinach...steam them, saute them in olive oil, roast them, whatever...



vegetables are your friend.

Anything green.



Bacon, cheese, milk, chocolate,steak,cheeseburger and turkey
