fried tofu.

-fried tomatoes on toast > fried mushrooms on toast imo :)

-w/w bagel or toast with nut butters
-make waffles/pancakes the night/weekend before, refrigerate, and toast
-I also sometimes make a batch of tempeh bacon, refrigerate, and nuke it
-soy yogurt with granola and fruit
-granola, muesli, or cereal with nondairy milk
-fruit smoothie
-oatmeal with nuts/fruit/spices
-any fruit (as a side, won't usually keep you full if thats all you eat!)
-any breakfast bar or granola bars
-muffins (made before or store-bought)

Well, I would say beans and rice, freeze it ahead of time and then just nuke them in the morning. But, if you are truly vegan well the rice and beans could have been fertilized with animal waste, so then I have absolutely no idea!

I eat fruits and nuts for breakfast. No prep time and very nutritious and filling. You can even eat on-the-go if necessary.
