The meat of a ripe coconut should be firm and fibrous, like an apple. It may smell a little bit, but if it has the least bit of "alcoholic" smell (pungent) that means it has already begun to ferment and should be thrown away. The larger the coconut, the bigger chance that they will go bad before they can be eaten.
You will know if you bite into an "off" coconut, if you don't already recognize it by smell. It will leave a funky aftertaste.

The meat is hard when it is ripe. Don't know about the smell, I've never smelled coconut rum, but alcohol is normally produced in plants which ferment as they decay. I think you need other organisms in there for fermentation to occur though, sorry I'm a zoologist not a botanist so my knowledge of the biochemical processes in plants is very limited.
I got dysentery after eating an off coconut in the Cook Islands when I was 15 and have not been too keen on them since. Anyway a coconut is a seed waiting for an opportunity to sprout, there may be hormones released or something in there which occurs with time. There must be some environmental cues because the nuts themselves are adapted to floating across the ocean and then sprouting when they reach land. No idea what the triggers are though, perhaps just sitting still for a while. Anyway there is a golden rule for all foods: if in doubt, chuck it out.
If you are afraid to use it, put it out for the birds. After suspiciously checking it out for a few days, they will love it, especially woodpeckers. The meat is very firm normally so there may be nothing wrong.
